Ok, so hands-down: I. LOVE. FOOD.
But when it comes to eating right, I've always struggled. I was always living to eat vs. eating to live. But through trial & error, I've found that it really isn't difficult to eat healthy & feel the same satisfactory result that indulging on a bunch of chocolately snacks & potato chips give. You just need to 'find your flavors'.
For myself, I find it totally difficult to go to the grocery store & find fruit that looks appetizing to me. Apples, oranges & bananas are just too.. boring! I've had them ever since I was young, & the flavors have just disappeared. I needed something new & fun. So I started by finding tropical fruit that aren't local to my region. & I'm literally & utterly 100% beyond OBSESSED with them!!
I'll start off with my most familiar fruit, & I'm sure @KatGaskin & @ThatPineappleGirl would agree is the b e s t.
They're so delicious! & when you find the perfectly ripe pineapple, it's melt-in-your-mouth juicy! Plus, they can be taken in a lot of directions for cooking. Such as smoothies, Salmon & teriyaki/dill, or just raw. But either way, pineapples never fail to amaze my taste buds.
My second favorite healthy snack is...
So when I tell people that I love to eat coconuts, the first reaction I get is "HOW?!". Well, my first attempt wasn't pretty either. I pulled up Youtube & typed in 'how to open a coconut' & the results flourished. There were so many helpful videos that I couldn't count. So I filled my brain with as much knowledge as I could. BUT, what they don't tell you is that these people are freaking Master Chef Champions or local islanders that grew up doing this shit. So when it was MY turn to give it a go.. ummmmmmm, yeah.
I first started by using a corkscrew to open a hole in the coconut to drain the juice. Then added a second hole as a shotgun, so the juice could pour out faster. About 10 minutes later, it was fully drained (these YouTubers do it in seconds, might I add). #FailNumber1
Then I found the biggest, heaviest knife I owned, & began to hit with the knifes back-side along the 'equator' of the coconut. Yeah, um. 10 minutes later of trying, & even bringing out a hammer, it wasn't working! (T-Minus 3 swings with their knife for the YouTubers) #FailNumber2
FINALLY I told my coconut, I was bringing it to da streets! AKA, my parking lot so I could throw it against the ground hehe. & What do you know! It worked. So then I washed my coconut, took this picture & ate it. Or at least as much as I could, because half of it was moldy haha. Don't wait a week to eat your coconuts guys. #FailNumber3
My final favorite snack, which is my ALL TIME FAVORITE, is.......
Pitaya, AKA Red Dragon Fruit (Hylocereus undatus) are literally little balls of fire. They look like it, & the flavor explodes in your mouth! (no, they're not actually spicy, just delicious).
So what I made, is a Pitaya Bowl. Much like an Acai Bowl, just using pitaya instead.
HOW TO MAKE:
1. 2 Pitaya Plus Packs
2. 1/2 Cup Frozen Mango
3. 1/2 Cup Frozen Pineapple
4. 4 Oz. (maybe a little more or less depending on how well it blends) Coconut Water
Then pour your pink GOLD into a bowl & top with you're favorites! Here I used Strawberries & shredded coconut, along with this mix of cocoa, chia seeds, & more coconut. I bought it from the healthy, interesting & random section of Marshall's.
But this is just to show you that healthy comes in all different shapes, sizes & even color! & that you can make anything taste great while being super healthy for you.
